1/4 cup (50g) all-purpose flour
1/2 cup (55g) confectioners' sugar
3/4 cup (90g) almond meal or almond flour
2 egg whites
6 tablespoons unsalted butter, melted
8 ounces good-quality dark chocolate (60-70%), melted
4 to 6 small squares good-quality dark chocolate (60-70%)

Divide the chocolate sqaures between the ramekins and top with the remaining mixture. Bake for 20 to 30 minutes or until cooked but soft in the middle. Stand in tins for 5 to 7 minutes before turning out. Serve immediately.
